Paleo the Easy Way

Ever feel like that?  ME TOO!  I have allergies to all kinds of food (gluten, dairy, soy, peanut, walnut, sunflower).  It can be incredibly overwhelming to find food that doesn’t make me sick.  The convince of the meal prep boxes made me so jealous… till I discovered Sunbasket.  THEY HAVE PALEO FOOD!!!

The Paleo Diet is a diet often referred to as the caveman diet as.  It is free from all grains, dairy and legumes (if you wanna go crazy alcohol too but I’m not crazy like that). Its become very popular as a weight loss diet especially with cross fitters (Keto is the other one you hear a lot about from this crew).  Sticking to the paleo diet has made a giant change in my health for the better and Sunbasket makes it really easy!

Ill say the recipes were PHENOMINAL, full of flavor and never boring or depriving.

Heres what I ordered,

Pork Chops with Kimchi Chimichurri and Sweet Potato

This was one of my favorite meals from all of my options on their meal plans.  The kimchi chimichurri was a really fun twist in this dish, it was savory, even my picky boyfriend LOVED this dish.  (He’s far from adventurous and very picky, steak is his order 90% of the time when we eat out).  It was a very simple to prepare dish.  The idea of Kimchi scared me a little, I’m super picky about my fermented foods but I was so incredibly surprised at the flavors it created. I’m a huge chimichurri fan so keep the twists coming!





Chorizo Chili with Coconut Cream

So this one for sure was on the super spicy side (this might have been my fault… oops!) I had mixed feelings about trying this recipe, I love chorizo but am used to standard chili with beans.  This was an incredibly pleasant surprise, minus the over spicing, I love chorizo and this was a really clever way to use it!  The coconut cream added an unexpected break in the flavors and pumpkin seeds added a great crunchy texture instead of the usual crackers.





Pork Chops with Apple and Kale Salad

Now this was actually my least favorite dish of the group.  The flavors were nice but the salad with the kale and apple was lacking the flavor punch I got from the other two (and frankly felt like a quick cheap filler) it was delicious but not as great as the other two I tried.  The texture of the kale and apples was unappealing with the pork chop and just didn’t work for me. The pork chop seasoning was DELICIOUS and I’ve recreated it several times.




This will certainly be a box I resubscribe to after I try a few more for you awesome people!  I think they made a real effort to create unique creative paleo options that the whole family can enjoy (even the pickiest of eaters).  Its organic as much as possible and they try to locally and source from small farms.  I give them a 4.5/5, growing pains have been an issue in the past and the high fat content could be less than ideal for some (including for the way my body loses weight).  Overall great meal box plan!

The 3 Books That Lit a Fire Under My Booty!

Some days we just need a reality check of how we are really being in our lives.  The amount of “self help” books that exist can be daunting.  “There’s nothing as unstoppable as a freight train full of fuck-yeah.” -Jen Sincero (one of my favorite authors from this list) and I want to get you on that train!  Mindset is so key in success and everyone deserves that.


Now this first book is by far my favorite I have read so far, I picked up the New York Times best selling book “You Are A Badass” from the Target shelves thinking, “this has to be something worth reading especially with a title like that” and wasn’t sure what to expect.  Jen Sincero does an amazing job winding through how we beat ourselves up with lots of humor, real talk and some tough love.  With statements like “So often, we pretend we’ve made a decision, when what we’ve really done is signed up to try until it gets too uncomfortable.”  (not gonna lie that statement really hit home!) being uncomfortable isn’t necessarily a bad thing as I learned from her.  Jen makes you take a real look at how you are in life for those around you and the most important for yourself above all.   The look at yourself can be a bit hard and harsh at times but if you really hang on and take it to heart you will find amazing transformation.  This audio book is in my rotation on my way to work because I always feel so pumped up for my day (heck I almost always find AMAZING parking at work, hows that for mindset changing reality?).  I shove this book down the throats of all of my friends insisting it will change their lives and mindset (and they always tell me I’m right 😉 ).  By the time I had recently finished this book I decided something had to change and so I did.



I first heard of Jack Canfield the same way most people have, he’s the brilliant man behind the “Chicken Soup for the Soul” series and the first to kick your butt about self doubt and sabotage.  He is the leading man of helping you get out of your own way on the path to success. The Success Principles includes inspiring stories of CEO’s, world-class athletes, celebrities, and people like you and me, it spells out the principles used and by successful men and women throughout history.  Read a chapter every day, do the work, but REALLY do the work (be honest with yourself) and find the path to actual happiness and success (the first step is admitting you’ve caused and brought all the good and bad into your life) Whatever it is you want to achieve his tough love and wisdom will help you get on the path to success.  He really makes you confront the things, as uncomfortable as they are that are stopping you from succeeding.


The final book for me is the hardest to write about. It really forced me to confront my food (and weight demons). No scale for 30 days?!?! Have you lost your mind?  After being told how the scale showed my value for so many years this was the hardest thing to give up!   But this simple plan of eating whole, simple, balanced meals three times a day changed my views on food.  The Whole 30 let me give up the obsession over what I was “supposed to eat” and let me see food for what it is… FUEL!  It is a plan that seems so incredibly overwhelming till you just do it.  At the end of the 30 days I had a full blown 6 pack, shed tons of weight, and had more energy than I knew what to do with! (Did I mention I slept the best I’ve ever slept in my life?) It Starts With Food and the Whole 30 are one of the most highly debated fitness trends but my experience I can’t ignore.  Want boundless energy? Less body fat? Better, glowing skin?  This is the hot ticket to stop the evil relationship with food and find power and love with your body the way it is!


These 3 books made a major difference in my life and I can’t wait to see you on your giant train of “fuck yea!”

Never Settle….

The take down of powerful men like Harvey Weinstein, Matt Lauer, John Lasseter and Chris Savino was the voice of what had been happening to women across the world on a daily basis.

As a Woman in this country you are most of the time seen as less, seen as property and everyone is entitled to that ownership.  You are expected to look a certain way, act a certain way and still get critiqued for it as if your existence is simply to please the male species.

After being in Orlando since 2005 I can honestly say I’ve seen my fair share of both sides of this coin and everyone tolerates the ugly, is the horrible dark secret of entertainment to the furthest reaches.

I worked at a popular dinner show notorious for giving female performers shifts based on wether or not they flirted or slept with the director… the rumors weren’t wrong.  As a generally friendly person this wasn’t a problem, until i got a boyfriend.  The director started with nasty, personally attacking notes (when previously you were performing above standards), cut hours and frankly unprofessional personal comments.  As a performer my worth to the company was purely in the availability of me to sleep with the male staff.  My hours of dedication, studying and the fact that I saved their asses on multiple occasions (there would have been no show) didn’t matter.  I only mattered as a piece of ass that once I belonged to another male, (of whom they hadn’t met but apparently had more respect for him than they had for me) I was “no longer of value to the company.”  My story isn’t alone, there are dozens of other women with similar stories or clearly being passed over for the young cute girl at this show.  There should be no room in any office, any stage or any place of business for this type of behavior.  Female performers here were only as valuable as the option to sleep with them.

Is all entertainment this close minded treating women like pieces of meat? Nope!  I flash forward 12 years and work for a company where I actually get thrown into the most stressful situations due to my quick thinking, problem solving and ability to deal with difficult guests, I just happen to be a girl who is good at it all. My gender is an after thought a “yes and?” with no bearing on my skills or abilities.  The difficulty of contracting and working for such a wonderful company is that I have to go back to my real job, where its a let down that once again as a woman I’m “less than” and get mansplained day in and day out because as a girl I couldn’t possibly know what i know.  At least I have the escape of my little world where I’m a fierce entertainment manager, whose intuition and quick thinking matters, where my opinion counts and my gender is an after thought.  When the really tough gigs come in, I’m the call knowing I can handle what ever the gig throws at us!

Never settle for a company that sees your gender as a liability, never settle for anyone who sees you as less than, never settle to be anything less than amazing!
